Set to open within The Langham, London, Sale e Pepe Mare marks an exciting new chapter in the legacy of Sale e Pepe, the iconic Knightsbridge restaurant that has shaped Italian dining in the capital since 1974. This collaboration brings together two renowned London institutions to create a landmark destination for coastal Italian cuisine.

Sale e Pepe Mare celebrates the sun-drenched elegance of Italy’s coastline, with a strong culinary focus on handmade pasta as a cornerstone of the menu, alongside exceptional seafood and timeless Italian flavours. Serving breakfast, lunch, and dinner, the restaurant blends tradition with contemporary Mediterranean sophistication.

We are now seeking an experienced Senior Chef de Partie – Pasta Maker to join our opening team. This role is entirely dedicated to fresh pasta production and execution and is suited only to chefs with proven, hands-on pasta-making experience in high-end Italian kitchens.

About the Role

As Senior Pasta Chef de Partie, you will be the specialist lead of the pasta section, responsible for the daily production, cooking, and service of all fresh pasta dishes. This is not a general Senior Chef de Partie role — your focus will be exclusively on pasta, from dough preparation to final execution during service.

You will work closely with the Executive Chef and Sous Chefs to ensure the pasta offering meets the highest standards of authenticity, consistency, and quality, while upholding the traditions of Italian pasta craftsmanship.

Key Responsibilities
 
  • Take ownership of the pasta section, with sole responsibility for fresh pasta production

  • Prepare, mix, laminate, shape, fill, and cut fresh pasta daily using traditional Italian techniques

  • Produce a range of pasta styles including long, short, filled, and baked pasta formats

  • Execute all pasta dishes during service with precision, consistency, and speed

  • Ensure correct dough hydration, resting, cooking times, seasoning, and finishing

  • Maintain impeccable standards of food quality, presentation, and flavour

  • Manage mise en place and production schedules to support high-volume, high-end service

  • Work closely with Sous Chefs on menu development, seasonal changes, and specials

  • Maintain strict food safety, hygiene, and cleanliness standards within the pasta section

  • Control stock, ordering, yields, and waste specifically related to pasta production

  • Support and guide junior chefs assisting in the pasta section

Requirements 

  • Proven experience as a Pasta Chef in a premium or luxury Italian restaurant

  • Strong technical mastery of fresh pasta doughs, fillings, and sauces

  • Deep knowledge of traditional Italian pasta styles and regional techniques

  • High attention to detail, consistency, and quality control

  • Ability to perform under pressure in a high-volume, fine-dining environment

  • Professional, disciplined approach and strong team ethic

  • Willingness to mentor junior chefs within the pasta section

  • Proof of right to work / settled or pre-settled status in the UK
